Captain – checks booth at start of each day, turns on oven, makes sure freezer is running, gets hot dog grill and warmer ready, stocks ice and other supplies as needed. Preps parchment paper for baking trays. Preps foil for hot dogs. Makes sure seed money is available at start of each day. Confirms shift coverage for all shifts. Maintains adequate change at booth. Assists in booth where needed. Reviews equipment and makes a list of anything needed for next day. Takes utensils home for washing. Makes sure all electrical equipment EXCEPT FREEZER is turned off at end of day. Transfers money to Henry at closing time. Takes cash box home at end of each day. Prepares final accounting report and confirms with Henry.
Cook #1– GLOVED oven operator/pizza chef – sets up trays, cooks pizza, monitors supply of pizza in warmer ready to serve; heats s’more cones when they are ordered; passes cooked food to customers.
Cook #2- GLOVED chef cooks hot dogs, places them in buns and wraps them in foil; placed them on try on top of oven to keep warm (there should be no more than 6 of these on top of oven at one time); sets up s’mores cones on designated tray and passes these to oven operator for warming; passes cooked food to customers.
Cashier – UNGLOVED takes food orders and passes them on to the cooks, collects payment. DOES NOT TOUCH FOOD
Other merchandise manager – UNGLOVED – serves water and dog biscuits. May assist in setting up pizza trays and back up s’more cones, but must BE GLOVED for these activities.

Pick up oven and cooler at Sally’s house and move to Common
Pick up water at BJ’s; load into trailer at Common
Pick up Pizza in Rhode Island; load first case into freezer and remainder into trailer
Pick up freezer at Tonya’s house
Set up all equipment at booth
Check all power sources
Meet Health Dept. inspector at booth (Captain)
Closing July 4, 6-8 pm – Slots 1, 2, 3, 4,
Unplug all equipment
Distribute remaining cooked food to carnival staff
Empty freezer and cooler
Pack up all tools, etc.
Remove all decorations
Load items going to Sally’s house into car
Pack up unused food, water to be distributed as decided
July 5 – return oven to Sally’s house
